Menemen (Mixed vegetables and eggs)
Serves 1

2 large tomatoes peeled and diced
1 small bell pepper diced
1 egg lightly whisked
1 dessertspoon olive oil
Large pinch salt and pepper

1. Heat olive oil in a pan and sauté peppers on medium heat for 3 minutes. Add tomatoes and raise
heat to high. Evaporate juice from tomatoes until no liquid is in the base of pan.
