Bulgur (village rice)
Makes 3 cups
1 onion diced
2 peppers diced
3 small tomatoes pureed in blender or grated
1 teaspoon dried mint
1 cup bulgur wheat washed
1. In a large pan fry onion and peppers in a little olive oil until tender.
2. Add pureed tomato and simmer for a few minutes.
3. Add mint and bulgur and cook over low heat for 3 minutes.
4. Add 2 cups boiling water and one teaspoon salt. Stir, lower heat, cover with lid and gently
simmer until bulgur is tender (20-25 minutes). Remove from heat and sit for 10 minutes before
removing the lid to serve.
